Almond Flour Chocolate Chip Cookies

Ingredients
  

  • 2.5 cups almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut oil (or melted butter)
  • 1/4 cup pure maple syrup or honey
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cups chocolate chips (use dairy-free chips for a vegan option)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the almond flour, baking soda, and salt.
  • In a separate bowl, beat the melted coconut oil (or softened butter) with the maple syrup (or honey), egg, and vanilla extract until well combined.
  • Add the wet mixture to the dry mixture and stir until a cookie dough forms.
  • Gently fold in the chocolate chips.
  • Using a spoon or cookie scoop, drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a fork to flatten each cookie slightly.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are gluten-free and have a lovely nutty flavor from the almond flour. Feel free to adjust the sweetness to your preference by adding more or less sweetener, and use your favorite type of chocolate chips.
