Homemade Tortillas

Growing up, one of my favorite foods was eating homemade tortillas. My grandmother owns her own Mexican restaurant and we would watch the “tortilla ladies” as we called them, flip the biggest tortillas with their bare hands and wait to get one right off the stove. We would fill them with butter and they would melt right in your mouth…My mother taught me how to make them growing up as she was taught by her grandmother. There are many variations to the way tortillas are made and so I’m not sure what it is about these tortillas that make them far superior to almost any other tortilla I have ever tried. One thing is always for sure, homemade and from scratch is always the best.

Homemade Tortillas

Ingredients:
-2 cups flour
-3/4 cup lard
-1/2 tspn salt
-1 cup warm water
(that’s it!)

Directions:
1. In a bowl combine all ingredients and only 1/2 cup of the warm water
2. Knead the mixture together. (True old fashioned would be by hand, but I use my kitchen aid. My mother used to use her bread maker!). Mix for a least 10 min. Your looking for pie crust dough consistency. Add small amounts of remaining water as needed.
3. Roll dough into 16-20 small round balls depending on the size you would like. Have a bowl of flour handy near by if the dough seems to sticky and sprinkle slightly to help roll together.
4. Let rolled dough rest for 20 minutes covered.
5. Sprinkle more flour on clean counter and begin to roll out dough. Try not to make them so thin that they begin to tear. Just enough to give a little with a pinch of your fingers.
6. Over cast iron skillet on median heat, cook tortilla’s until they begin to bubble on each side, noticing when the dough is fully cooked before flipping.
