Deliciously Gluten-Free: Almond Flour Chocolate Chip Cookies Recipe

I recently just finished a 45-day gut reset in the hopes of trying to balance out my hormones. I don’t know what it is, but I hit 35 and my body has gone all out of wack 😳.
One of the requirements in the gut reset was to avoid sugar of course, so when the reset ended I wanted to jump back into sweets slowly. So, I went back to this classic recipe I used to make when I was counting macros 🙂 I’ve baked these almond flour chocolate chip cookies countless times and have tweaked them more than once or twice to get them just right so I promise they won’t disappoint if you’re keen on a low-carb lifestyle.

Here’s the sweets:

Almond Flour Chocolate Chip Cookies
Ingredients
- 2.5 cups almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut oil (or melted butter)
- 1/4 cup pure maple syrup or honey
- 1 egg
- 1 tsp vanilla extract
- 1/2 cups chocolate chips (use dairy-free chips for a vegan option)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the almond flour, baking soda, and salt.
- In a separate bowl, beat the melted coconut oil (or softened butter) with the maple syrup (or honey), egg, and vanilla extract until well combined.
- Add the wet mixture to the dry mixture and stir until a cookie dough forms.
- Gently fold in the chocolate chips.
- Using a spoon or cookie scoop, drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Use a fork to flatten each cookie slightly.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
